Milk science for foam
What Milk Froths Best
Which milk foams best for lattes and cappuccinos: whole, skim, oat, or almond. The protein and fat science behind stable foam.

The short answer
Whole dairy milk froths best: its protein builds the bubble walls and its fat makes the foam creamy and stable. Skim milk makes more foam but it is airy and dries out fast. Among plant milks, barista-edition oat milk is the most reliable; almond milk is the hardest to foam. Start with cold milk straight from the refrigerator for the best results.

01Best for testing milks
Breville Milk Cafe BMF600XL
The most capable electric frother: induction heating, a temperature dial, and the largest capacity here.
- Frothing capacity: 16 fl oz (500 ml) max
- Heating capacity: 25 fl oz (750 ml) max
- Heating method: Induction heating

Whole dairy milk wins on protein and fat, and the Breville's temperature dial lets you find the exact heat where each milk peaks, from cold stir to 160 degrees F. The latte disc's gentle aeration is the most forgiving of the plant milks.
Strengths
- Induction heating distributes heat evenly for smoother, scald-free milk
- Temperature dial runs from cold stir to 160 degrees F and above
- 16 fl oz frothing max and 25 fl oz heating max handle up to three cups at once
- Separate latte and cappuccino frothing discs match foam density to the drink
Limitations
- Premium pricing puts it well above basic jug frothers
- Footprint is larger than single-serve frothers like the Aeroccino 4
- No preset recipes; you choose the temperature and disc yourself each time

What owners report
- Owners praise the induction heating for warming milk evenly without scalded spots
- Many owners like the temperature dial running from a cold stir up to 160 degrees F and beyond
- Owners say the separate latte and cappuccino discs let them match foam density to the drink
- Some owners find the premium price hard to justify over basic jug frothers
- Owners note it takes more counter space than single-serve frothers like the Aeroccino 4
- A common complaint is having no preset recipes, so temperature and disc choices are manual every time
Best for: Households making multiple milk drinks a day who want temperature control and big batches.
Skip if: You only make one small drink at a time; the jug is large for a single cappuccino and the price reflects that.
02Best for dairy foam
Nespresso Aeroccino 4
The compact classic: four one-touch recipes, 120 ml of froth, and a dishwasher-safe jug.
- Froth capacity: 120 ml max
- Hot milk capacity: 240 ml max
- Recipes: 4: 2 hot froth, hot milk, cold foam

Nespresso's own guidance says whole or semi-skimmed milk at refrigerator temperature, 4 to 6 degrees C, gives optimal froth. The Aeroccino 4's 120 ml froth cycle is tuned exactly for that single serving of dairy foam.
Strengths
- Four dedicated buttons: two hot froth textures, hot milk, and cold foam
- 120 ml froth max is exactly right for two cappuccinos or one latte macchiato
- Jug is dishwasher safe up to 70 degrees C, a real advantage over rivals
- Auto power-off after 9 minutes of inactivity saves energy
Limitations
- No temperature adjustment; you get the preset temperatures only
- 240 ml hot milk max is smaller than jug rivals like the Breville
- Nespresso advises against enriched, powdered, or flavored milks that can damage the coating
| Froth capacity | 120 ml max |
|---|---|
| Hot milk capacity | 240 ml max |
| Recipes | 4: 2 hot froth, hot milk, cold foam |
| Cleaning | Dishwasher safe, max 70 degrees C |

- A common complaint is Nespresso warning against enriched, powdered, or flavored milks that can damage the coating
Best for: Single-drink households who want hot or cold foam with zero decisions.
Skip if: You regularly make milk drinks for two or more; 120 ml of froth per cycle means repeat rounds.
03Best for microfoam
Bellman CX-25 Stovetop Steamer
Real steam pressure on any stovetop: the only pick here that makes true barista microfoam.
- Brew capacity: 3, 6, or 9 cup brews
- Material: 18/8 stainless steel, bakelite
- Steam: Cafe-style wand with pressure gauge
Real steam rewards good milk more than any whisk can. Whole milk steamed with the Bellman's wand turns glossy and sweet; the pressure gauge tells you when the steam is hot enough to texture without scalding.
Strengths
- Pressure gauge shows exactly when steam is ready for milk or espresso brewing
- Cafe-style steam wand produces real microfoam, not aerated bubbles
- Works on gas, electric, ceramic, campfire, and most induction cooktops
- 18/8 stainless steel with bakelite handles is built for decades of use
Limitations
- Learning curve: pressure management and steaming technique take practice
- No automatic shut-off; you watch the gauge and the wand yourself
- Slower per drink than an electric jug when making several rounds
| Brew capacity | 3, 6, or 9 cup brews |
|---|---|
| Material | 18/8 stainless steel, bakelite |
| Steam | Cafe-style wand with pressure gauge |
| Stovetop compatibility | Gas, electric, ceramic, campfire, induction |

What owners report
- Owners praise the pressure gauge for showing exactly when steam is ready
- Many owners like the cafe-style wand producing real microfoam instead of loose aerated bubbles
- Owners say the 18/8 steel body with bakelite handles feels built for decades of stovetop use
- Some owners admit the pressure management and steaming technique take real practice
- A common complaint is the lack of automatic shut-off, leaving the gauge and wand entirely to the user
- Owners note it is slower per drink than an electric jug when making several rounds
Best for: Latte-art pursuers who want genuine steam texture without an espresso machine.
Skip if: You want push-button convenience; this requires heating, pressure reading, and steaming technique.

Questions, answered
Why does whole milk foam better than skim?
Foam is a protein structure. Milk proteins unfold around air bubbles and hold them in place; fat then coats the bubbles and makes the foam creamy and stable. Skim milk has the protein but not the fat, so it foams big and collapses fast.
Does cold or warm milk froth better?
Cold milk, straight from the refrigerator. Frothing gives you more working time before the milk reaches serving temperature, and proteins denature more evenly. Never re-froth milk that has already been heated; the proteins are spent.
Why won't my almond milk foam?
Most almond milk is mostly water with very little protein, and protein is what builds foam. Barista-edition almond milk adds protein and stabilizers specifically for frothing. Without them, almond milk makes thin, quick-collapsing bubbles.
Can I froth chocolate milk?
Yes in most jug frothers; the Capresso manual explicitly allows chocolate milk up to the MAX F line. Nespresso advises against adding chocolate powder directly to the Aeroccino 4 because it can damage the non-stick coating, so use pre-mixed chocolate milk instead.
